destroking basicly shortens the stroke, with a short stroke the pistons dont build up as much enursa, so it is easier to get the piston to move up and then down. A shorter stroke if you can imagine that a stroked crank where the rods mount is going to come off the center quite a bit, so a destroke would keep that tighter in. Its like being on a merry go round, and standing on the edge verses standiing in the middle, in the middle you can spin faster, on the edge you would get tossed off at high speeds. You can also play with the rod length, Longer rods also change the angle of the wrist pins and can handle more power.
I am sure there is somethings I am not explaining very well. I know the legistics in my head but trying to explain on paper is diff.
