Anywhere I can find this information? I've googled the hell out of it but keep finding Homemade websites and the like.

General info,
What are the Gun Laws in Texas?

I just wanted to know the technicalities of carrying in your car, and whether or not you need a permit to carry in the car, etc.

Unless you have a CHL, I believe it needs to not be in arms reach when in the car. The only location I know that isnt really debatable for "arms reach" would be the bed/trunk.

the new conceal and carry law i think just states the gun cant be loaded but anyone can carry a gun for the purpose of transporting it.....

I know they just past a traveling gun law that you can carry your gun in your vehicle when your traveling loaded,but the it doesnt say what is determined as traveling, im gonna assume its at cops descretion

Passing thru two or more counties is what its determined as.
