It seems there is an internal water leak...most likely a crack head or block. However, in the end, it would be better to replace the current motor with a same low mileage version.

Do you have the motor? Do you have a place to do it?
Have you ruled out the lower intake manifold? I can't remember if the truck variants had the composite intakes but a lot of the GM's have sealing problems that leak coolant down into the engine. Many times when the Dexcool hasn't been changed sooner than the factory spec 5/100 it starts eating the gaskets.

x2! Dexcool is crap coolant, imo. I've seen multiple GM motors have large sludge buildups from that crap and it's nowhere near "maintenance free" like GM likes to state. It's also gunks up with any sort of leak in the coolant system or when mixed with other types of coolant.
