Use the 2 factory gaskets, then an additional gasket to bring the count up to 3. Remove oil cooler using a vice and a hex socket and throw both the middle part and the cooler away. Then install the 3 gaskets, with the above bolts/studs and torque down.
To "block off" coolant, just take the line coming IN to the cooler and bend it around so it goes into the line returning the coolant back to the block. Both are right next to each other.
