Ideally, you would do this on a dyno or at a track.
Videotape, or get a friend to videotape your gauges while you do a 3rd gear run. (Just be safe and do it on an isolated flat stretch of road.)
I have the aem wideband, the boost gauge and the scangauge (reading knock and timing advance)
Play it back at home and document the gauge readings.
