If you disconnect the IAC and the car doesn't die immediately then you have a vacuum leak around the intake manifold. When you disconnect the IAC the car shouldn't be able to get any air into the manifold and it should die. If it stays on then it's still pulling air from someplace. check the vacuum lines off the intake manifold. Theres one on top and I think two on the bottom. The brake booster line is known to come off pretty often. If none of your vacuum lines are leaking check the intake manifold gasket and throttle body gasket.
