What about an oil pressure sender? Those work up to some high pressures and should be compatible with water...
I believe they have a simple resistive output. Just add a known precision resistor and a voltage source and you'd have a voltage output proportional to pressure.

What would you use the output for? So you go threw all this to get a voltage output that is proprtional to the injection pressure....... what does this do that a pressure gauge wouldn't? Or are you talking about making an output for data logging purposes?
